Okayama Kakushi Sushi (Kibizen)

Okayama's local specialty, Kakushi Sushi is said to have been made for townspeople who wished for a place to eat something delicious, while also holding true to the standards of the time. During the Edo Period the spirit of simplicity and frugality was highly regarded, and so Kakushi Sushi was born. A convenient place where townspeople could eat the luxurious prepared dishes cradled in rice, while also staying hidden from prying eyes. The food is also called "Bizen Bara Sushi" or "Festival Sushi" depending on the region or the shop. The Japanese restaurant "Kibizen" at Hotel Granvia Okayama offers the famous "Ujo Ogon Kakushi Sushi" which is topped with fine colorful sliced egg.
